Many flower websites are relay services. They take your order, keep a commission and pass it to a florist you'll never hear of, which is why the bouquet sometimes bears no resemblance to the photo. Check for a real address and a real phone number.
Ask when they buy. A florist who goes to market daily is selling flowers cut days ago; one who buys weekly is selling flowers cut a fortnight ago. It shows up in the vase about four days later.
Flowers handed to a general courier get treated like a parcel. Ask whether the florist runs their own drivers and whether the vans are air-conditioned. In a Sydney summer that matters enormously.
